Have our late lunch at the town of Waimea. A popular place called the Shrimp Station right at the intersection of route 50 and 550 is a must try. The steamed shrimps here are served with a garlic sauce or sweet chili garlic sauce. The shrimp is sweet and tender, with a slight crunch to the bite. They are actually  better cooked than the steam shrimp we had at Romy’s a few days ago. Three Stars.

It’s already 4PM, we want to head over to Po’ipu for the Spouting Horn blowhole and the Po’ipu Beach sunset. The blowhole at Po’ipu is quite predictable, unlike the blowhole at Oahu, some of the ocean sprays are 3 to 4 stories high.

Po’ipu Spouting Horn

As we get to the Po’ipu Beach, the sun is about to set; we notice there is a monk seal on the beach, it seems that it likes to come up to the beach to sleep, there are NOAA folks here to make sure tourists don’t get too close. As we are busy watching the monk seal coming to shore, someone notice there is a whale splashing around out in the sea. I’m not sure whether this proves my theory or not, but whales seem to like to surface regularly during sunrise and sunset, this whale shows its tail splash numerous times.

Po’ipu Beach Sunset

Oops, almost forget the sunset. We turn toward the western horizon and see the sun quickly disappearing below the horizon. What a way to end the day. Kauai is a very layback place, the beaches and coastline here are less crowded comparing to Oahu. If you have the time, you will find your quiet corner to enjoy that hard earned precious moment. Here’s a compilation of the Kauai scenic coastline covering the Princeville and Po’ipu areas.

Before leaving Po’ipu, we head over to a shop that specializes in Hawaiian hot dogs, it is called Puka Dog. We learn about this place from the Travel Channel (or is it the Travel Channel). Puka means a hole, referring to a hole in the hot dog bun where the sausage goes into. I try the Polish sausage with mango relish, lilikoi (passion fruit) mustard and hot jalapeno sauce. It tastes really good, not overly sweet, the sausage is of very good quality, the toasted bun is hot and soft.

We decide to eat in tonight, throwing together a big salad with Kamuela tomato, Costco brand Italian prosciutto ham, mozzarella cheese, arugula, olive oil and lemon juice. And of course our favorite Costco rotisserie chicken.
